Agaves are cooked for 36-40 hours in masonry ovens, grinded in four-step roller mills, then fermented in closed stainless steel tanks for 40-50 hours using a proprietary propagated yeast. Most 1800 tequilas are double-distilled in copper pot stills, while Coconut as well as Cucumber & Jalapeño tequilas are distilled in stainless steels tanks.
