This artisanal agave spirit is made at Palenque Crista La Santa in Santiago Matatlan, Oaxaca, and overseen by 4th generation Mezcalero Alberto Mendez. Creyente uses 100% Oaxacan mineral rich agaves, sourced from Tlacolula (Valle Centrales: for fruity, vegetal, and complex flavor) and Yautepec (eastern foothills of Sierra Sur: for floral, fresh, herbal, citrus notes). The ages from each elevation are processed separately. Piñas are cooked in traditional, conical earthen pit ovens lined with volcanic rocks and local mesquite firewood, covered in earth, and slowly-roasted for 3 days. Roasted piñas are crushed with a traditional stone mill (molino de piedra) to extract its juices. The bagasse and agave juice are fermented using naturally occurring, local, airborne yeast in wooden vats. Finally, the liquid is double-distilled in small copper pots before blending together or aging.
